You really can eat amazing food at university!

One phrase that i hear over and over again at university is 'i miss my mums cooking'. & yes, there is nothing like being at home on a Sunday, tucking into a roast dinner that you mum has been slaving over for the entire afternoon. But, just because you haven't got someone to run around after you and cooking everything you demand, doesn't mean that you can't eat great food!

Now, i know it's easy to grab a pot noodle from the cupboard in order to curb your cravings, but it's almost just as easy to cook up an amazing & healthy meal! One thing that i have learned recently is that fresh food really isn't that pricey if you know where to look! (Asda reduced isles are a godsend.)

This is a dish that myself and the boyfriend made over the weekend, and honestly it took under 15 minutes to prepare and make. It took us even less time to eat it!!!

Beef Ramen with veggies 

Ingredients used:

One sirloin steak
Dried egg noodles (two nests) 
Shiitake Mushrooms (you can use normal mushrooms)
Bean-sprouts 
Mange tout (a green veggie that looks like podded peas)
Half a red Chilli 
Spring Onions 
1 red Onion
Teriyaki Sauce 
Soy Sauce
Salt/Pepper (not essential)  

This might seem like a lot of ingredients however they're all relatively cheap and the remainder of the food that you don't eat can be frozen and reheated (thoroughly) at a later date.

Step by step on how to prepare and make:

1. Grab a saucepan, fill with water and leave to boil (just like making a pot noodle right? Well, kinda...)



2. Prep all of your veggies in any way that you fancy. Personally i like to leave the manage tout and bean-sprouts how they are and then just chop up the spring onions and red onion. With the mushrooms, you can either leave them whole or cut them up. I chose to add the smaller ones into the wok whole and then used a few of the larger ones as a garnish on the top. 





3. After you've prepared the veg, it's time to start cooking! Put some oil into a large wok and leave it to heat up. Once the oil is bubbling slightly, you can add in your steak. (Put it in whole and then slice when cooked.) It's completely up to you how you cook your steak, but for me personally (and Jamie), we like to have it very rare. It's not for everyone but give it a try! Add this stage i poured some teriyaki sauce into the Wok, to give the steak a quick marinade.

4. Once the steak is cooked, leave it to rest whilst you cook your veggies and noodles. They'll both take around the same time to cook, so you can put them on the heat at the same time.


 5. Throw all the vegetables into the same wok that you used to cook the steak (don't worry about cleaning/washing it as the juice from the steak will make the vegetables taste amazing. When you've done this, add the noodles to the boiling water and leave to cook.

6. Once your noodles are ready and your veg is cooked, take them both off of the heat and get ready to put this magical creation together!

I like to put the noodles at the bottom of the bowl, then add my cooked veg and top it with the steak and garnish vegetables. You don't have to add the cold garnish if you don't want to, i just think it makes the dish feel slightly more authentic.

And WA LA... d o n e !

I hope this little step-by-step guide is helpful and i hope it shows you that cooking really good food while you're at uni is possible! All of this was cooked using only two pans!! (All students hate washing up.)
